I beg to differ with one of your comments that "you can't make beer without hops".
Beer can and is made without hops....although not popular in the U.S.
Remember the Heather ales and other Gruets. Other herbs such as heather both preserve the beer as well as flavor it.
One of you said, "hops are a spice" I think you hit it.
My humble 2 cents.
