Greg, for your awesome sounding menu where you were having a hard time thinking of a beer pairing, and were considering wine, I think i have a solution...
Bierre de Champagne. Nice and light, has wine-y characteristics, could withstand such bold flavors, etc etc etc.
Thoughts?
PS: I thought of this when I first heard the postshow when it came out. Sorry for being too lazy to bring it up before now.
